Mini Diabetic-Friendly Lemon Impossible Pies

Ingredients:

  • 1 can (14 oz) sugar-free sweetened condensed milk
  • ½ cup fresh lemon juice
  • 2 eggs
  • 2 tbsp unsalted butter, melted
  • ¼ cup whole wheat or almond flour
  • 1 tsp vanilla extract
  • Zest of 1 lemon

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Blend all ingredients until smooth.
  3. Pour into greased mini muffin tin.
  4. Bake 15–20 minutes until set and golden.
  5. Cool & enjoy! Great low-sugar treat!
