Mini Diabetic-Friendly Lemon Impossible Pies
Ingredients:
- 1 can (14 oz) sugar-free sweetened condensed milk
- ½ cup fresh lemon juice
- 2 eggs
- 2 tbsp unsalted butter, melted
- ¼ cup whole wheat or almond flour
- 1 tsp vanilla extract
- Zest of 1 lemon
Directions:
- Preheat oven to 350°F (175°C).
- Blend all ingredients until smooth.
- Pour into greased mini muffin tin.
- Bake 15–20 minutes until set and golden.
- Cool & enjoy! Great low-sugar treat!
